Baked Salmon with Citrus Salsa

Ingredients
  

  • 1 salmon fillet 120–150 g
  • 1 orange chopped
  • 1 red onion chopped finely
  • 1 lime juiced
  • 1 cup coriander fresh
  • salt and pepper to taste
  • 1 red chilli optional - to taste

Instructions
 

  • Bake salmon in preheated oven at 375°F (190°C) for 10 mins
  • Mix salsa ingredients in a bowl. orange, onion, coriander and chilli with lime juice
  • Top baked salmon with fresh citrus salsa before serving.

Notes

  • Serve with boiled new potatoes or mash.
  • Make extra salsa to use on salads - this will keep in fridge for about 5 days .
