Baked Salmon with Citrus Salsa

Ingredients
- 1 salmon fillet 120–150 g
- 1 orange chopped
- 1 red onion chopped finely
- 1 lime juiced
- 1 cup coriander fresh
- salt and pepper to taste
- 1 red chilli optional - to taste
Instructions
- Bake salmon in preheated oven at 375°F (190°C) for 10 mins
- Mix salsa ingredients in a bowl. orange, onion, coriander and chilli with lime juice
- Top baked salmon with fresh citrus salsa before serving.
Notes
- Serve with boiled new potatoes or mash.
- Make extra salsa to use on salads - this will keep in fridge for about 5 days .
