Ingredients
  

  • 30 prawns
  • 4 cloves garlic minced
  • 2 red onion chopped
  • 3 cups kale chopped/ massaged with olive oil
  • 2 cups carrot coarsely grated
  • 2 cups red and yellow peppers sliced
  • 2 tbsp olive oil
  • 1 lemon cut into wedges

Instructions
 

  • Sauté onion and garlic in olive oil for 1 min.
  • Add prawns and cook until pink.
  • Add kale, carrots and peppers; stir for 3–4 min.
  • Squeeze lemon juice before serving.

Notes

  • Serve with rice or quinoa or couscous or noodles.
  • If you re looking for more flavour - try one of the nut butter dressings as a drizzle after cooking.
  • To make this vegan - replace prawns with woodland mushrooms.
