The selenium power bowl with quinoa, broccoli, and eggs is a wholesome, balanced meal designed to nourish the body with essential nutrients that support energy, immunity, and cellular health. Ingredients
- 2 cups cooked quinoa rinse quinoa before cooking
- 3 boiled egg chopped finely
- 3 cups steamed broccoli or lightly roasted
- 1 avocado sliced
- 5 tbsp sunflower seeds
- 4 tsp olive oil
- juice of a lemon/ lime
- 1 cup chopped coriander
- 1 red chilli to taste
Instructions
- Assemble quinoa, egg, avocado and broccoli in a bowl.
- Make the coriander dressing by mixing olive oil, lemon juice, chilli and chopped coriander.
- Sprinkle sunflower seeds for extra selenium and vitamin E .
- Pour the dressing over assembled bowl
Notes
- This can be served hot or cold
- Make a large batch of quinoa and store in freezer in serving sizes - this will keep for approx 12 months. Allow to cool completely and store in glass jars. Defrost completely before using.
