Spinach, Avocado & Sunflower Seed Salad

Ingredients
  

  • 6 cups baby spinach
  • 1 large ripe avocado sliced
  • 1 punnet baby tomatoes sliced in half
  • 1/2 cup roasted sunflower seeds
  • 1 red bell pepper thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • salt & pepper to taste
  • 1 whole beetroot peeled and grated

Instructions
 

  • In a large bowl, combine spinach, tomatoes, avocado, pepper, and sunflower seeds.
  • Whisk olive oil, vinegar, mustard, salt, and pepper to make the dressing.
  • Drizzle over the salad and toss gently before serving.
