Ingredients
- 4 cups fresh spinach / kale / rocket washed and chopped
- 1 cup watercress
- 1 orange peeled and sliced
- 1 red pepper sliced
- 1 yellow pepper
- 1 handful Brazil nuts chopped
- 1 tbsp olive oil
- 1 tsp lemon juice
- Salt & pepper to taste
- 1 red chilli - - finely chopped optional
Instructions
- Toss spinach, orange, and peppers in a bowl.
- Sprinkle chopped Brazil nuts and watercress on top.
- make a dressing with olive oil ,lemon juice and chilli if using. Season to taste.

- Or use nut butter drizzle recipe instead of salad dressing above.
- Make a batch of this salad and use for packed lunches.
