Citrus Spinach & Brazil Nut Salad

Ingredients
  

  • 4 cups fresh spinach / kale / rocket washed and chopped
  • 1 cup watercress
  • 1 orange peeled and sliced
  • 1 red pepper sliced
  • 1 yellow pepper
  • 1 handful Brazil nuts chopped
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • Salt & pepper to taste
  • 1 red chilli - - finely chopped optional

Instructions
 

  • Toss spinach, orange, and peppers in a bowl.
  • Sprinkle chopped Brazil nuts and watercress on top.
  • make a dressing with olive oil ,lemon juice and chilli if using. Season to taste.

Notes

  • Or use nut butter drizzle recipe instead of salad dressing above.
  • Make a batch of this salad and use for packed lunches.
