Grilled Asparagus & Red Pepper Wraps

Vegetables such as asparagus and red pepper contribute smaller but meaningful amounts of vitamin E along with fiber, vitamins, and minerals. Additionally, avocado is not only a good source of healthy monounsaturated fats but also supplies vitamin E, making it an excellent base for nutrient-dense meals.
Topping avocado with a zhoug dressing—a blend of cilantro, herbs, olive oil, and spices—further boosts vitamin E intake, enhances antioxidant content, and adds vibrant flavour, creating a delicious and healthful way to incorporate this essential nutrient into your diet.

Ingredients
  

  • 8 asparagus spears
  • ½ red bell pepper sliced
  • 1 cup rocket
  • 1 tsp olive oil
  • ½ avocado sliced
  • whole-grain tortilla or wrap if using for lunch
  • Salt pepper, and lemon juice
  • 1 tbsp zhoug see notes for recipe

Instructions
 

  • Brush asparagus and bell pepper with oil and grill 4–5 min until tender.
  • Lay veggies and avocado slices in the wrap.
  • Drizzle with Zhoug
  • Sprinkle salt, pepper, and a dash of lemon juice; roll and serve warm.

Notes

  • Try making extra filling as a side dish for dinner - then using the leftovers in a wrap for lunch the next day.
  • Roast some sweet potato and top with asparagus - for an alternative which is high in Vitamin A 
  • Serve drizzled with Zhoug or Nut butter dressing.
