Ingredients
- 2 cups shredded kale
- 2 cups shredded cabbage
- 1 cup shredded or grated carrot
- 1/4 cup chopped coriander
- 2 tbsp lime juice
- 1 tbsp honey
- 2 tbsp olive oil
- Salt to taste
- 2 cups Broccoli sprouts optional
Instructions
- Whisk together lime juice, honey, olive oil, and salt.
- Massage kale and cabbage with some olive oil and salt.
- Toss kale, cabbage, carrot, and coriander with salad dressing.
- Let sit 10 minutes before serving for best texture.
- Optional - After mixing the slaw, top each serving with a handful of fresh broccoli sprouts for crunch and a peppery bite.• Adds a great contrast to the sweet honey-lime dressing.
Notes
- To make this super colourful use red cabbage.
- Make a large batch to keep in the fridge for lunch time comfort bowls.
- If kale is not your thing replace with red cabbage.
