Ingredients
  

  • 2 cups shredded kale
  • 2 cups shredded cabbage
  • 1 cup shredded or grated carrot
  • 1/4 cup chopped coriander
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 2 tbsp olive oil
  • Salt to taste
  • 2 cups Broccoli sprouts optional

Instructions
 

  • Whisk together lime juice, honey, olive oil, and salt.
  • Massage kale and cabbage with some olive oil and salt.
  • Toss kale, cabbage, carrot, and coriander with salad dressing.
  • Let sit 10 minutes before serving for best texture.
  • Optional - After mixing the slaw, top each serving with a handful of fresh broccoli sprouts for crunch and a peppery bite.
    • Adds a great contrast to the sweet honey-lime dressing.

Notes

  • To make this super colourful use red cabbage.
  • Make a large batch to keep  in the fridge for lunch time comfort bowls.
  • If kale is not your thing replace with red cabbage.
